Re-purpose that leftover rotisserie chicken with ripe summer tomatoes, feta cheese and fresh herbs. A simple but very flavorful main dish salad.
Recipe: Rotisserie Chicken, Heirloom Tomato and Feta Salad

Ingredients
- 3 – 4 heirloom tomatoes, sliced
- 3 ounces crumbled feta cheese
- 2 cups rotisserie chicken
- 1/4 cup white balsamic vinegar
- 1 tablespoon extra virgin olive oil
- 1 teaspoon fresh thyme leaves
- 1 teaspoon fresh oregano leaves
Directions
- On a large plate or platter arrange the tomato slices.
- Sprinkle the feta cheese and chicken over the top of the tomatoes.
- In a small bowl whisk together the vinegar, olive oil, thyme and oregano leaves, until thickened slightly.
- Pour the dressing over the salad.
- Serve immediately.
