Roasted Asparagus

Asparagus is such a versatile and delicious vegetable—whether serving it simply steamed with a squeeze of lemon, or as part of an elaborate pasta dish. Roasting asparagus brings out the sweetness of the vegetable, which is accented by the addition of balsamic vinegar.

This recipe is a basic recipe, leaving room for the cook to improvise with more ingredients. Shave Parmesan or Manchego cheese over the asparagus after they are roasted. Sprinkle some lemon zest or toasted pine nuts on top. Chopped hard-boiled egg or a fried egg with an oozy yolk make this side dish into a meal.

Recipe: Simple Roasted Asparagus

Ingredients

  • 2 pounds fresh asparagus, tough ends trimmed
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • salt and pepper to taste

Directions

  1. Heat the oven to 400° F.
  2. Place the asparagus on a baking sheet.
  3. Drizzle the oil and vinegar over the asparagus.
  4. Sprinkle the asparagus with salt and pepper.
  5. Toss the asparagus to coat evenly.
  6. Roast asparagus for 8-10 minutes, depending on the thickness of the asparagus.
  7. Asparagus is done when tender and slightly caramelized.
