Romantic breakfasts for two are wonderful on Valentine’s Day, but let’s be honest, that never happens with kids in the house. Every year we have a little Valentine’s tradition of making red velvet pancakes. They are sweet and festive and are perfect for the whole family. I even now get my daughter involved in making them with me. She is a huge fan of the whisking and flipping and, of course, the eating.
Instead of regular maple syrup we like to give them a true red velvet cake flavor and top them with a smooth cream cheese glaze. It comes together quickly and the kids are more than happy to topping their stack with insane amounts before digging in. If you have time, and more patient children than I, you can even top them with sprinkles!
No matter how you choose to finish them off, these decadent treats are bound to become an instant hit in your Valentine’s kitchen.
RECIPE: Red Velvet Pancakes with Cream Cheese Glaze
Yields 12 pancakes
Ingredients
- 1 cup unbleached all-purpose flour
- ¾ teaspoons baking powder
- ¼ teaspoon baking soda
- 1 pinch fine sea salt
- ½ cup granulated sugar
- ¼ cup cocoa powder
- 1 large egg
- ¾ cup buttermilk
- 1 tablespoons red velvet extract OR 2 teaspoons vanilla extra and 4 drops red food coloring
- 1 tablespoons unsalted butter, melted
- ¼ cup unsalted butter for the pan, as needed
For the glaze:
- 4 ounces cream cheese, softened
- 1 cup confectioners’ sugar
- 1 teaspoon vanilla extract
- ¼ cup whole milk
Directions
- In a large bowl sift together the flour, baking powder, baking soda, salt, sugar, and cocoa powder. Whisk in the egg, buttermilk, extract, and melted butter until smooth.
- In a large non-stick skillet warm about 1 tablespoon of butter over medium heat. Once it starts to bubble slightly add ¼ cups of the batter to the pan and allow the pancakes to cook until bubbles start to show in the top. Then, flip them over and cook on the second size until lightly brown and the batter is cooked through. Repeat as needed until all the pancakes are cooked.
- Whisk together the ingredients for the glaze until smooth. Then drizzle lightly over the pancakes and serve warm.
