Who doesn't love lasagna? It's warm, delicious and super satisfying. Now using store-bought rotisserie chicken you can make it easily. Only 5 ingredients stand between you and an amazingly easy and tasty dinner!
RECIPE: Pesto Chicken Lasagna Roll-ups

Ingredients
- 2 cups rotisserie chicken
- 1/4 cup + 2 tablespoons pesto sauce
- 8 lasagna noodles
- 1 jar (24 oz) marinara sauce
- 2 cups shredded Mozzarella cheese
Directions
- Heat oven to 375° F.
- Cook the noodles according to package instructions.
- Drain the noodles well, placing over the side of the colander to prevent sticking.
- Place the chicken into a medium bowl.
- Mix 1/4 cup pesto sauce with the chicken.
- Place the tomato sauce into a medium bowl and stir in the remaining 2 tablespoons of pesto sauce.
- Pour about 1/4 of the sauce in the bottom of an 8 x 8 baking dish.
- Place one lasagna noodle on a clean dry surface.
- Divide the chicken into 8 equal portions.
- Place one portion of chicken onto one end of a lasagna noodle.
- Sprinkle about 1 teaspoon of cheese onto the chicken.
- Carefully roll the noodle up, tucking in any bits of filling that fall out.
- Place the filled noodle seam side down into the dish.
- Repeat with the remaining noodles, chicken and cheese.
- Spoon the remaining sauce over the rolled lasagna.
- Sprinkle the remaining cheese over the sauce.
- Cover the dish with foil and bake for 20 minutes.
- Remove foil, bake an additional 10 minutes, until the cheese is browned slightly.
