Mangos al Tequila

As one of the most popular fruits in the world, mangoes are great for incorporating into your favorite dishes. Because of its tenderizing properties, mangoes are also great for meat marinades and sauces. Plump, juicy mango chunks give any green salad the flavor it needs and are so sweet, they flavor that cocktail, smoothie or homemade juice to perfection.

In the streets of Latin America, mangoes are sold peeled on a stick, sprinkled with chili powder and squeeze of fresh lime juice. It's a popular and healthy after-school snack enjoyed by kids as they walk home.

Mangos al tequila is a simple dessert recipe prepared in less than 20 minutes. This dessert requires only a few — but key — ingredients to take your leftover mangoes to the next level. For a kid-friendly version, simply omit the tequila in the cooking process and replace with one teaspoon of vanilla extract.

RECIPE: Mangos al Tequila

Serves 2

Prep time: 15 minutes

Cook time: 10 minutes

Ingredients

  • 1/3 cup water
  • 3 tablespoons granulated sugar
  • 1 tablespoon tequila
  • 2 Ataulfo mangoes
  • zest of 1 lime
  • fresh mint leaves for garnish

Directions

  1. In a small saucepan, heat water and sugar over medium-high heat, stirring until sugar melts. At the sign of first boil, add tequila. Simmer for 5 minutes. Remove from heat and set aside.
  2. Peel and slice mangoes in large slices and place on a serving plate. Top with tequila syrup and sprinkle with lime zest. Garnish with mint leaves.
