Guava Cream Cheese-Stuffed French Toast

This delicious recipe is perfect to enjoy with the whole family on a lazy winter break morning or after the ecstasy of opening holiday gifts has passed.

My family loves French toast, so I decided to give to my recipe a Latino twist using guava jam. The combination of flavors is wonderful! The best part is that they are easy and quick to make, so you don't have to spend Christmas morning in the kitchen. Don't worry too much about getting the filling right down into the bottom of the bread; it will spread as it cooks. Your only regret will be not making more to much on for later!

RECIPE: Guava and Cream Cheese-Stuffed French Toast

Yields 8 – 10 servings

Ingredients

  • 1 loaf Challah bread
  • 1 cup cream cheese
  • 1/4 cup guava jam
  • 2 eggs
  • 1/3 cup milk
  • 1 pinch of nutmeg
  • 1/2 teaspoon cinnamon
  • 1 teaspoon pure vanilla extract
  • 2 tablespoon butter
  • confectioner's sugar for dusting (optional)

Directions

  1. Slice the bread into 1 inch-thick slices (about 8-10 total).
  2. In a medium bowl mix the cream cheese and jam until well combined. Set aside.
  3. Using a sharp knife, make a pocket in the center of the bread slices. Don't cut all the way through; you just need some space where you'll put the filling. Spoon the filling into the bread slices, about 1 1/2 to 2 tablespoons per slice.
  4. In a medium bowl mix the eggs, milk, nutmeg, cinnamon and vanilla; whisk until well-combined.
  5. Melt the butter in a large nonstick skillet over medium heat.
  6. Soak bread slices in the egg mixture, making sure to coat well, turning over to soak the other side as well.
  7. Place the French toast in the hot pan, cook on each side until golden brown, about 3-4 minutes per side.
  8. Dust with confectioner's sugar, if desired. Serve warm.
