Rocket Pops

I wanted to make popsicles for the holiday, but I don't have molds, and I also wanted to do something a little more unique. So, this recipe from Hoosier Homemade for Jell-O rocket pops seemed perfect. I adapted the recipe a little bit—it recommends plastic or paper cups, but I found that foam worked best. I could just easily break away the foam once the pops were frozen, and didn't have to worry about running it under hot water. They took a very long time to freeze—I actually left them in the freezer overnight. The Jell-O was fine, but the whipped cream in the middle still melted pretty quickly. I could see them working well for an outdoor barbecue, where people will be eating them quickly. I really liked the look of the sprinkles on the pops, it was very festive. And, they tasted really good!

Ingredients

1 small package red Jell-O

1 small package blue Jell-O

1 cup sugar

2 cups boiling water

Ice cubes

2 cups cold water

1 tub whipped topping

Sprinkles

Directions

  1. Prepare the red Jell-O: Combine the Jell-O package and half a cup of sugar. Stir, then add a cup of boiling water and stir again until the sugar is dissolved.

  2. Add enough ice cubes to one cup of cold water that it makes two cups of water in all.

  3. Add the cold water and ice to the Jell-O mixture and stir until the ice cubes are melted.

  4. Pour the mix evenly into foam cups—I used 16 5-ounce cups. Freeze for 1 hour.

  5. While the red Jell-O is freezing, make the blue Jell-O the same way you made the red, following steps 1, 2 and 3. Then put the blue Jell-O in the refrigerator for an hour.

  6. After the red Jell-O's been in the freezer for an hour, take it out and spoon a few tablespoons of the whipped topping onto each cup. Then, take your blue Jell-O out of the fridge and use it to top off the cups.

  7. Freeze for an hour (or until almost firm) and put a popsicle stick into each cup.

  8. Put back in the freezer overnight.

  9. Take the pops out of the freezer and tear away the cups.

  10. Splash a little water on the pops and shake the sprinkles on top (the water will make the sprinkles stick).
