Instructions
Step 1
Remove the stems from fresh sour cherries and rinse them under running water.
Step 2
Place each cherry into a pitter, and squeeze the handles together to remove the pit from the cherry. Repeat with the remaining sour cherries for use in your recipe.
Step 3
To preserve sour cherries, combine ½ cup of sugar with every 4 cups of the fruit before freezing, then use the mixture later in recipes requiring cherries.
Step 4
Add sour cherries into recipes for cherry pie, using 4 cups pitted sour cherries, 1 cup sugar, 1 cup cherry juice and 3 tbsp. cornstarch. Cook this over low heat on the stove top, stirring until heated through and thickened.
Step 5
Replace each cup of fruit in a quick bread (such as banana bread) recipe with 1 cup of pitted sour cherries and 2 tbsp. sugar, adding more sugar to taste if desired. Put this cherry-sugar mixture in your recipe when instructed to add the fruit.
