I adapted this recipe from Two Peas & Their Pod, but made it a lot easier by using pre-made sugar cookie dough and a tub of white frosting (as opposed to making my own cookie dough and frosting). This dessert is good for people who really like their sweets—it has the sugar cookie, plus the frosting, plus the sprinkles, so it's very sugary. If (like me) you don't have baking tools, just put the frosting in a zip-top bag and cut off the tip, then push the frosting out through the small hole. This will give the cookies a cleaner look than if you just spread the frosting on.
Ingredients
Tube of pre-made sugar cookie dough
Vanilla frosting
Blue food coloring
Red and blue sprinkles
Directions

Bake the sugar cookies as directed on the package.

While the cookies are baking, mix the frosting with blue food coloring.

Add sprinkles right when the cookies come out of the oven so they stick.

Make a sandwich with the cookies by piping a layer of frosting on one side of a cookie, and placing the other on top.
