Touted as a super food, sweet potatoes are no longer thought of only at Thanksgiving (mashed, mixed with copious amounts of butter and brown sugar, topped with marshmallows). Nope, these spuds have some pretty astounding health benefits.
Check out what one medium sweet potato can provide in our daily nutrition requirements:
- More than 200 percent vitamin A
- About 50 percent vitamin C and Manganese
- A third of our copper, as well as vitamins B5 and B6
- A good source of fiber
The quickest way to prepare a sweet potato is to pierce it several times all over, then microwave on a microwave-safe plate for 6-8 minutes at full power, until soft. Open and fill with whatever floats your boat.
