We Americans are super stuck on the premise that dinner should consist of meat, veg and starch.
At least I am.
Or was.
Until our family moved abroad, made a bunch of friends from all over the world and discovered that many cultures don’t share this philosophy. It really is true that for most Europeans, lunch is the biggest, heartiest meal of the day, with dinner being a much more simple affair.
Eggs fill that ‘simplicity space’ beautifully. A great source of protein and amazingly inexpensive (even free-range), eggs have been center plate for some of the most memorably-delicious family dinners at our house.
