No matter how you feel about Jell-O, this is a gorgeous 4th of July dessert, and the colors just jump out at you. The recipe comes from food blogger Brown Eyed Girl, who adapted it from The Food Librarian. Either way, the process could not be much easier. You just combine batches of red and blue Jell-O, and finish it all off with sweet, white condensed milk for a simple and fun way to dress up your holiday table. And speaking of simple, since the recipe calls mostly for mixing, the kids are welcome to help out. Just keep them away from all that boiling water!
Ingredients
2 boxes (6 ounces each) Jell-O in red and blue colors (I chose cherry and the berry blue flavors)
1 14-ounce can sweetened condensed milk
2 envelopes unflavored gelatin

For each color, dissolve one box of Jell-O in 2 cups of boiling water. (The Jell-O directions say to add 2 additional cups of cold water, but I didn't want to dilute the color or flavor.)

Pour each color into an 8×8-inch square pan, and chill least 3 hours or overnight. (I chose overnight so there would be no question of firmness.)

After chilling the two pans of Jell-O, cut them into small blocks.

Carefully mix the blocks in a 9×13-inch pan. (Carefully, so the blocks don't break apart.)

In a separate bowl, pour 2 envelopes of unflavored gelatin into 1/2 cup cold water. After the gelatin blooms, add 1 1/2 cups boiling water and dissolve. Add the can of condensed milk. Stir and let cool. Pour cooled milk mixture over Jell-O blocks in the 9×13-inch pan. Skim off any small bubbles that are created when you pour the condensed milk on the Jell-O pieces. Chill overnight or at least 3 hours until firm. (Again, I chilled them overnight.)

Cut into blocks or shapes (a star cookie cutter comes in handy here), and serve.
