Tuna Orzo Pasta

Toss cooked whole-grain orzo pasta with olive oil and red wine vinegar. Stir in canned tuna, capers, kidney beans, sliced black olives, chopped bell peppers and cucumber, lemon juice, grated Parmesan cheese and chopped parsley.

Spread mayonnaise on whole-wheat lavash or tortillas. Top with a romaine lettuce leaf and a mashed mixture of avocado, lemon juice, chopped tomato and crumbled bacon; roll up to enclose and cut on the diagonal.

Turkey & Cheese Wraps

Spread a cheese like Boursin or Laughing Cow on a whole-wheat tortilla. Top with shredded carrots, deli-sliced turkey, cheddar cheese and spinach leaves. Roll up and cut crosswise into pinwheels, threading each round onto a skewer or toothpicks.

Curried Egg Salad Sliders

Combine chopped hard-boiled eggs, Greek-style yogurt, curry powder, chopped apples, toasted almond slivers and snipped chives. Scoop onto toasted split whole-wheat dinner rolls and top with a handful of spinach leaves.

Bagel Sandwiches

Fold shredded carrots and radishes and chopped tarragon and dill into whipped cream cheese. Spread onto a split whole-wheat mini bagel and top with a layer of thinly sliced cucumbers.

Compost Wafflewiches

Toss chopped or broken pieces of pretzels, raisins, banana, apple and nuts with a drizzle of honey. Spread a nut butter on mini whole-wheat waffles and sandwich the honey mixture in between.

Pesto Chicken Boats

Use a food processor to pulse together arugula, walnuts, olive oil, lemon juice and grated Parmigiano-Reggiano cheese. Toss with chopped cooked chicken, thinly sliced fennel, dried cranberries and goat cheese. Spoon onto endive leaves.

Tuna Melt Nachos

Mix together canned tuna, chopped celery, mustard, mayonnaise, lemon juice and finely chopped bread-and-butter pickles. Spoon onto tortilla chips and top with strips of American cheese. Bake until the cheese melts.

Chicken Caprese Kebabs

Thread sautéed chicken cubes, halved cherry tomatoes and mozzarella cubes onto skewers. Purée basil with garlic, lemon juice and mayonnaise and serve as a dipping sauce.
