RECIPE: Broiled Grapefruit with Ginger

Yields: 4 servings
Active Time:

  • 2 grapefruits
  • Scant 1/4 cup honey
  • 1/4 cup candied ginger, chopped
  • 1/3 cup pomegranate seeds
  • 1/4 cup mint leaves, sliced in very thin strips

DIRECTIONS:

  1. Preheat the oven’s broiler.
  2. Slice the grapefruits in half and place on a parchment paper-lined baking sheet. Cut a small slice off the bottom of each half to help them stand upright.
  3. Using a small pairing knife, loosen each section of grapefruit by making small cuts between the fruit, the peel, and the membrane on either side.
  4. In a small bowl, mix together honey and ginger.
  5. Drizzle mixture over each grapefruit half and place in the oven to broil for 5 minutes.
  6. Garnish with pomegranate seeds and mint.
