Cooks We Love: Annalise Sandberg

Annalise Sandberg is the baker, blogger and recipe developer behind Completely Delicious, a baking and dessert blog. A self-taught Salt Lake City-based baker, Annalise excels at canning projects and edible gifts, as well as seasonal pies and ice cream confections. We particularly love her Baking Tutorials (great for the new or developing baker) and huge breadth of cake and cookie recipes. With feet firmly planted in fall, we find ourselves with more time to spend in the kitchen, and are thankful that Completely Delicious exists for days when desserts seems a necessary order of the day.

What’s your earliest cooking memory? I was so excited as I baked my first batch of chocolate chip cookies when I was 8 or so that I forgot the oven mitts when I went to pull them out of the oven. Ouch!

How would you characterize or describe your cooking style today? I bake traditional recipes with traditional ingredients like real butter, sugar, flour and eggs.

What’s your favorite thing to cook at home? Why? I love to bake pies. The process can be long and sometimes frustrating, but the reward is oh so worth it!

What are three things you have in the pantry at all times? Shredded coconut, chocolate chips and real vanilla extract.

What’s your “There’s Nothing in the Fridge" dinner? The one thing you often whip up with very few ingredients or, perhaps, very little inspiration? Some sort of pasta with whatever I can find mixed in: veggies or leftover meat. Or if the kitchen is really empty, olive oil, cheese and pepper will work just fine!

What are some of your kitchen goals – i.e., skills you want to improve on or recipes you want to try or master? I have never made my own bagels. Definitely want to try them someday!

How has becoming a mother changed your experience as a home cook? I'm really looking forward to the day when my son is old enough to help and learn from me as I bake and cook. Right now he is Chief Beater Licker.

What are some of your favorite cookbooks and/or food blogs? "The Gourmet Cookbook" is a my go-to when I need a basic recipe, as is Dorie Greenspan's "Baking: From My Home to Yours" for baking recipes specifically.

Besides other cookbooks or food blogs, where do you draw inspiration for your cooking? Spending so much time reading about food on and offline, inspiration is all around me! Most of my recipes just come to me randomly, maybe they're inspired by something I saw, something I ate in a restaurant, or just by sheer creativity as I'm in my kitchen.
