
Ingredients
2 cups rolled oats
1/2 cup coconut milk (more as needed)
1 orange, juiced and zested to yield about 1/4 teaspoon of the zest (about half the orange)
2 teaspoons honey (optional)
Pinch of salt
1 apple, grated
1/2 cup dried cherries or other fruit
1/2 cup skin-on almonds, toasted and coarsely chopped
1/4 cup dried coconut chips, toasted (optional)
Fresh fruit, for serving (optional)
Directions

In a medium sized bowl, combine oats, coconut milk, orange juice and zest, honey if using, salt, grated apple, and cherries and stir to combine. If the mixture seems dry, stir in a little more coconut milk.

Allow to soften in the refrigerator for at least 1 1/2 hours or up to 3 days. Serve muesli with a sprinkling of toasted chopped almonds and coconut, and fresh fruit if you like.
