When cookie cravings hit our family, I can often be found in the kitchen whipping up a batch of our favorite chocolate chip cookies. The truth is, though, that by the time the cookies come out of the oven, I’m over my craving.
No, I’m not some master dieter who can talk her way out of a cookie craving. I’m one of those live-on-the-edge dangerous types who is always dipping her finger in the cookie dough. One ball of dough for the cookie sheet, one ball of dough for my mouth. It’s the way I’ve always made cookies and I really never see myself outgrowing it at this point.
I’ve gone to great lengths to add cookie dough into my life in as many ways as possible. Sure, the real thing is great, but what about a rich, chocolate cupcake topped with a soft frosting resembling my favorite indulgent treat? Now that is amazing.
This frosting is too soft to pipe (not to mention, the mini chocolate chips would get stuck in the piping tip anyway), so take the easy route and slather this frosting on with a butter knife. Depending on how generous you are, you’ll be able to frost 12-18 cupcakes with one batch of frosting.
I’ve added a teaspoon of molasses to this recipe to give it more of that amazing dark brown sugar flavor. (Did you know that brown sugar is just white sugar with molasses added to it? If you ever find yourself out of brown sugar, just stir a bit of molasses into your regular granulated sugar. It’s an easy fix!) You can leave the molasses out if you don’t have it, but I like the extra oomph of cookie dough flavor it gives this recipe.
