Blueberry Streusel Muffins

This blueberry muffin recipe is easy to make and will satisfy even the fussiest palates. Feel free add half a cup of mixed nuts for an even tastier treat.

1 cup buttermilk

2 eggs

1 teaspoon vanilla extract

2 2/3 cups flour

1 cup sugar

1 tablespoon baking powder

1 teaspoon ground cinnamon

A pinch of salt

1 stick unsalted butter, diced and chilled

2 cups fresh blueberries

Zest of 1 whole lemon

2 tablespoons unsalted butter, melted

Preheat the oven to 350 degrees. Next, put the buttermilk, eggs and vanilla extract in a small bowl and whisk it all together lightly. Set this aside and we'll use it in a few minutes.

Grab a large mixing bowl and combine the flour, sugar, baking powder, cinnamon and a pinch of salt. Stir them with a spoon until they are combined. This is the start of your dry ingredients.

Next, you can add in your chilled, diced butter and rub it into the dry ingredients using your fingertips. Chilling the butter makes it much easier to work with. Make sure you get all of the butter and really rub it in—don't be afraid to get your hands dirty!

After all that rubbing, your mixture should start to look like bread crumbs. When it does, scoop out about 1/2 cup of the dry mixture and set aside in a small separate bowl. This will be used to make your streusel topping.

Add the egg mixture to the large bowl with dry ingredients. Mix until it's only just combined. It's ok if there are lumps.

Now you are ready to add in the blueberries and lemon zest. Fold them both into your batter lightly until everything is evenly combined.

Spray your muffin pan with nonstick cooking spray. Take a spoon and scoop the batter into the pan. You will have enough batter to fill each hole almost to the top, which will make the muffins look big and full.

Now it's time to make the streusel topping. Pour the melted butter into the dry ingredients that you set aside earlier. Mix them together with a fork until they are combined and slightly crumbly. Scatter this streusel topping evenly over all of the muffins.

Place the muffin pan on the middle shelf of your preheated oven. Bake for 20 to 25 minutes or until golden brown. To check if they are done, test with a toothpick. If it comes out clean, they are ready. If not, bake them for a couple more minutes.

Remove the pan from the oven. Let the muffins cool in their pan for five minutes before you tip them out on a wire rack to cool completely. Now all you need is a glass of milk.
