Short Term Storage
Step 1
Wrap the fish tightly in several layers of wax paper.
Step 2
Secure the paper ends with tape.
Step 3
Place the wrapped fish in a refrigerator set between 34 and 36 degrees, and plan to eat it within one to two days. If the fish begins to smell "fishy" within that time, it should be discarded.
Long Term Storage
Step 1
Rinse a whole fish under water and place it on a metal tray in the freezer.
Step 2
Run water over the fish again once it has completely frozen and return to the tray in the freezer. Repeat this process several times to "glaze" the fish. Place the fish in a freezer bag and store in the freezer up to three months.
Step 3
Place individual fish steaks or fillets in freezer bags with all the air squeezed out. Lay the bags flat in the freezer. Steaks and fillets frozen in this manner can keep for up to three months.
