This short ribs recipe, courtesy of Maire Byrne, chef and founder of Thyme Cafe and Market, is a palatable collision of sweet and salty piquancy, sure to satisfy any carnivorous cravings. The rub alone will have everyone's mouths watering.
Recipe: Short Ribs
Ingredients:
- 1 cup brown sugar
- 1 teaspoon smoke salt
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1/2 teaspoon red pepper
- 1 tablespoon cayenne peper
- 2 tablespoons onion powder
- Salt and pepper
- 2 cups barbecue sauce
Directions:
- Preheat the oven to 300°F. Mix together spices for rub. Cover ribs completely with rub.
- Lay ribs on foiled sheet pan, meaty side down, and cover with foil.
- Bake 2 1/2 hours until meat is starting to shrink away from end of the bone. Remove from oven.
- Cut ribs into portions desired, cover with BBQ sauce.
- Put back into a 500°F oven for 3-5 minutes or into a broiler for 1-2.
- Turn ribs over and repeat on other side.
