Canela—also known in English as cinnamon—is a spice that I highly recommend you incorporate into your daily baking and cooking. You can read all about the health benefits of canela here. This paleta is refreshing, but slightly spicy. The canela (cinnamon tea) used to make these paletas combined with the honey and lemon slice are a revitalizing treat. No fancy popsicle molds? No popsicle sticks? No problem! Make these in simple paper cups and use a cinnamon stick for a rustic look.
PALETAS DE CANELA
Ingredients
2 cups water
1 cinnamon stick
3 tablespoons honey
Lemon slices (optional)
Directions
- Bring water with cinnamon stick to a boil; remove from heat, cover, and let steep for 1 hour.
- Discard cinnamon sticks and stir in honey until dissolved.
- In small paper cups, pour three ounces of tea in each cup and add a lemon slice to each. The lemon slice will float.
- Make a lid for each cup with a small amount of aluminum foil. Cover each cup with the foil, sealing to prevent leaks.
- Pierce the center of the aluminum foil with a cinnamon stick and press it straight down until it holds the lemon slice in place at the bottom of the cup.
- Put the cups in the freezer and let them freeze for several hours until hard.
- The popsicles can be removed easily by letting them sit for a bit to melt slightly or running them under warm water.
Yields five 3-ounce paletas.
