I love chocolate chip cookies as much as the next lifestyle editor, but these holiday-inspired cookies are just a little more special. These sweet treats take color cues from Santa's suit, with gorgeous red cranberries and big white chocolate chunks. Not only are they are a fun alternative to raisins or chocolate chips (too small), who can argue with a perfectly color-coordinated cookie for the holiday season?
RECIPE: Cranberry White Chocolate Chunk Cookies
Yields 2 dozen cookies
Ingredients
- 1 ½ sticks unsalted butter, melted
- 1 cup firmly packed light brown sugar
- ½ white sugar
- 1½ tablespoons vanilla extract
- 1 large egg
- 1 large egg yolk
- 2 cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup dried cranberries, chopped
- 1 cup white chocolate chunks (or a chocolate bar cut into small chunks)
Directions
- Preheat the oven to 350 degrees F.
- Line 2 cookie sheets with parchment paper or use nonstick spray.
- Cream together the melted butter and sugars in a stand-up mixer or an electric mixer until creamy and smooth.
- Add the vanilla, egg and egg yolk.
- Sift together the baking soda, flour and salt. Gradually add to the wet ingredients, just until incorporated.
- Fold the cranberries and white chocolate with a wooden spoon into the dough until evenly distributed.
- Chill the dough in the fridge for 10 minutes.
- Use a small ice cream scoop to scoop 2 tablespoons of dough onto the prepared cookie sheets, about 2 inches apart.
- Bake for 12-15 minutes until the edges are set and slightly golden brown.
- Let cool for 3 minutes before transferring to a wire rack.
