Have you heard of dessert dip? I hadn't, until my Pinterest feed became overrun with all manner of recipes for just that, not that long ago.
Seems I had some catching up to do, as the array of sweet dips out there is nothing short of mind-boggling:
Cookies and Cream. S'mores. Tiramisu. Funfetti (of course).
I could go on and on.
And I totally get the appeal. They all whip up in the mixer or food processor in about 5 minutes, yield enough to serve a crowd and work with pretty much anything you can think to dip!
I decided to make up for lost time, and started with one of my favorite sweets—speculoos cookies!
Just like a proper dessert dip, this one has just a handful of ingredients, and comes together in about five minutes.
Of course, you can serve this up with any of your favorite "dippers"—apple slices, pretzel sticks, animal crackers. But I couldn't resist pairing this dip with some delicious (and easy!) homemade cinnamon-sugar pita chips!
Better late than never, right?
RECIPE: Cookie Butter Dip
Yields: about 1 ½ cups
Ingredients:
- 8 ounces cream cheese, softened
- 3/4 cup cookie butter
- 3/4 cup brown sugar
- 1 tablespoon confectioners' sugar
Directions:
- Place all ingredients in the bowl of a mixer, beat until light, fluffy and well-blended. Refrigerate until ready to serve.
RECIPE: Cinnamon-Sugar Pita Chips
Yields: 4 dozen
Ingredients:
- 3 tablespoons sugar
- 2 teaspoons cinnamon
- 4 tablespoons butter, melted
- 6 pitas, each cut into 8 wedges
Directions:
- Pre-heat oven to 400 degrees. Line two baking sheets with parchment paper.
- Combine cinnamon and sugar in a small bowl.
- Brush pita wedges with a bit of melted butter; sprinkle with cinnamon-sugar. Bake until golden brown and crisp, 10 to 12 minutes. Transfer to a wire rack to cool completely.
