Tape-resist art is perfect for young children.
When my youngest was a toddler, we did a lot of tape-resist artwork. The mess was minimal, and I could set him up with the materials while I sat nearby as he took complete ownership of the activity. Simply tape sections of canvas with either duct tape or painters tape, hand them some paints, and let them create. Consider taping off the first letter of their name or a geometric design. I got a little bit more ambitious one afternoon and taped off sections in the shape of a bridge as an interpretation of The Water Lily Pond by Monet.

Combine art with learning.
When my youngest was a preschooler, I tried teaching him to spell his name with a fun Thanksgiving turkey kids craft. Using construction paper, I created a turkey body shape and cut out feathers; one for each letter of his name to help him practice spelling his name. Once he had it right, he was able to glue the feathers to the body for a cute Thanksgiving place setting.
